Apple flan

Today I made apple flan remembering many Sundays in which I prepared homemade flans with my mother-in-law for dessert; both she and I loved cooking and enjoyed cooking together on Sundays for many years. Unfortunately my mother-in-law is no longer with us but there is the memory of the flans and biscuits that we elaborated together.

This apple flan, gives a new touch to the recipe, which I adapted for Mycook. As you will see it is very simple to elaborate and all that requires is patience not to eat it before setting.

  • 400 grams of pulp of apples reinetas
  • 20 grams of sugar
  • 25 grams of butter
  • For caramel:
  • 100 g. sugar
  • 1 tablespoon water
  • For flan:
  • 500 gr. whole milk
  • 1 branch of cinnamon
  • the rind of a lemon
  • 4 eggs
  • 100 gr sugar
  1. First we brew the caramel by heating the sugar with water in a frying pan until a dark caramel is made. Then carefully pour into an aluminum mold that will fit into the steam tray and allow to cool.
  2. Then we pour into the glass apples, peeled and cut into slices, with butter and sugar and set 8 minutes,100 degrees, 2.We reserve speed.
  3. Now we heat the milk with cinnamon and lemon rind, 10 minutes,100 degrees, speed 1.Similarly, set aside and strain with the basket.
  4. We pour the milk back into the jar and add eggs and sugar mixing 20 seconds speed 4.
  5. We also add apples and mix 10 seconds at speed 2.
  6. Now we pour the preparation the caramelized mold, cover with foil and introduce into the steam tray, previously pouring a liter of water into the jar. Then we program 60 minutes,120 degrees, speed 3.
  7. Finally let cool for several hours in the fridge
