Christmas consomme

As every year, on December 31 I prepare a light Christmas consomme that serves as an entrant to as much copious food as we eat in these dates. Usually I try to prepare a couple of Mycook jars to reserve something for January 1, in which after such a holiday, I just hear the New Year’s Concert and eat from the remains of the 31st. This consomme is my traditional recipe, but you can make variants, and throw quails, turkey etc. Would you like a bowl of warm consomme?

Ingredients
  • A piece of good ham
  • Beef marrow bone or canilla
  • 1 chicken thigh
  • one onion a
  • carrot
  • a leek (only white part)
  • 1
  • celery
  • turnip

  • 4 or 5 green beans
  • 1000 g water
  • 20 g of oil
  • Salt and pepper
Preparation
  1. First, we peel the onion and split it into quarters
  2. Then place in the basket the piece of ham, veal bone and chicken thigh and put vegetables in the jar. We booked.
  3. Next, we add 900 g of water, sprinkling and place the basket in its position. We schedule 45 minutes, 100, speed 2.
  4. Over time, we rectify salt if needed. You can replace it with a pill of broth of bird.We add what is left of water, that is, 100 g. We schedule 15 minutes, 100, speed 2.
  5. Finally, we remove the basket by helping us from the spatula. We filter the broth with a fine mesh sieve to remove all vegetables and possible remnants of the meat. Let cool, degrease and filter several times so that we have a finer consomme.
  6. To finish we dish in bowls of broth, putting on the bottom finito chopped boiled egg and ham taquitos. If you like you can also put on a drizzle of jeréz, peppermint leaf, etc.
