Curry chickpeas

I love chickpeas, and not only as part of traditional pots or stewpots. It is a legume with multiple vitamins: Vitamin A, Calcium, Vitamin D, Vitamin B6, Iron… Therefore, I think it should be an essential part, like other legumes, of our Mediterranean diet.

This time I used chickpeas cooked from pot, with which there are no excuses not to eat chickpeas due to lack of time, because what takes the longest in the traditional recipe, is to cook chickpeas.

So you know, chickpeas:

  • They are a source of vegetable protein.
  • Its high fiber content helps to fight constipation, reduce the possibility of suffering intestinal diseases and quench appetite.
  • They lower bad cholesterol and protect against cardiovascular diseases.

  • 200 grams of cooked chickpeas
  • 40 grams of olive oil
  • 1 onion
  • 3 cloves of garlic
  • 100 grams basmati rice
  • 200 ml coconut milk
  • 250 ml water
  • 2 tablespoons curry paste or curry powder
  • 20 grams of fresh basil
  • 1 tablespoon of soy sauce.
Preparation
  1. First we boil the rice, according to Mycook’s instructions to prepare it, and reserve.
  2. Then we oil in the Mycook and schedule 1 minute,120 degrees, speed 1.
  3. Then we pour inside the onion, sliced carrot, garlic and program 4 minutes 120 degrees, speed 1.
  4. Then we introduce the water, coconut milk, curry, basil and coconut sauce, and cook with butterfly set, 5 minutes,120 degrees, speed 2.
  5. Finally we serve with basmati rice

To prepare basmati rice:
Put the water, salt, garlic, oil and program 8 minutes, 120°, speed 2.
