Fast carbonara pasta

The carbonara type sauce that is prepared with this recipe is not the original, nor does it intend to be, in Italy it is prepared with egg, without cream, here in Spain usually with cream, and I to make this recipe I use egg and evaporated milk, a mixture of the two versions and replacing the cream with evaporated milk to make the cream recipe a little lighter.

Ingredients
  • 300 gr. pasta (I used macaroni this time)
  • 50 gr. parmesan cheese
  • 40 gr. onion
  • 30 gr. olive oil
  • 200 gr. bacon strips
  • 250 gr. evaporated milk
  • 480 gr. water
  • 1 beaten egg
  • 1 teaspoon salt
  • pepper
Preparation
  1. To throw the chopped parmesan into a jar. Chop for 15 seconds at speed 10. Book.
  2. Put oil and onion into the jar. Schedule 10 seconds to speed 5. Then cook 4 minutes, temperature 120ºC, speed 1-S.
  3. Place the mixing paddle on the blades.
  4. Add bacon strips and fry 3 minutes, temperature 120ºC, speed 2.
  5. Add evaporated milk, water and salt. Heat 6 minutes, temperature 100ºC, speed 2.
  6. Add pasta and cook 9 minutes, temperature 100ºC, speed 2. The pasta cooking time will depend on the type of pasta you use and the instructions of each manufacturer.
  7. Pour the beaten egg and mix for 2 minutes, temperature 100ºC, speed 2.
  8. When serving pepper to taste and sprinkle with grated Parmesan we had reserved.
