German cheesecake or Käsekuchen

Today I bring another different and exquisite cheesecake recipe too: German cheesecake or Käsekuchen. This recipe is made with cottage cheese and meringue and is usually accompanied with red fruit jam, orange, peach etc.

There are different variants of this recipe and Germans use quark cheese and creme fraiche.

Ingredients
  • For the cake base:
  • 1 whole egg
  • 125 gr butter
  • 1 tablespoon of sugar
  • 200 grams of flour
  • For the filling:
  • 1 glass of milk
  • 1 sackle of Flanin the Child
  • zest of one lemon
  • 4 large eggs
  • 150 grams of sugar
  • 500 gr. cottage cheese or Quark

Preparation
  1. First we melt the butter in the microwave.
  2. Then we pour the egg into the jar, with the tablespoon of sugar and butter and set 1 minute speed 5.
  3. Then we add the flour and set 1 minute kneading speed.
  4. Now we take it out and store it in film for an hour in the fridge.
  5. Similarly, we then spread on the base and sides of a round removable pastry mold and reserve.
  6. Then we separate the whites from the yolks of the four eggs and assemble them with the butterfly in the Mycook for 5 minutes speed 5 adding a pinch of salt and pour the sugar in minute 3 and reserve.
  7. Now we pour in the jar clean egg yolks, the flanin envelope diluted in milk, lemon zest, sugar and lemon and set 1 minute speed 5.
  8. Finally mix the whites with this mixture in a bowl, gently stirring with a spatula so that they do not get down and put into the mold on the dough.
  9. To finish, bake at 180 degrees about two hours, depending on the oven and checking if it is done by clicking in the center
Notes
Accompany creme fraiche, berries, jam etc.
