With the arrival of the cool we also more fancy starters or hot snacks and that is why today I propose some balls of mozzarella. Although at first glance it seems a complicated or laborious recipe once you get with it you will see that the first steps are very simple, then you have to let the dough rise and little more. Although it takes time to make it the result you will love it.

  • a little fresh rosemary
  • 140 gr of water at room temperature
  • 3 gr of dry bakery yeast
  • ½ teaspoon sugar
  • 15 gr extra virgin olive oil
  • 125 gr normal wheat flour
  • 125 gr strength flour
  • ½ teaspoon salt
  • 100 gr lactose-free mozzarella diced
  • abundant oil for frying
  1. Put the rosemary into the jar and schedule 10 seconds at speed 8. Take out and book.
  2. Now pour the water, yeast and sugar and schedule 1 minute at 40 th speed 1.
  3. Add 15 g of olive oil, flours and salt. Schedule 2 minutes of kneading.
  4. Add rosemary and mix with the rest of ingredients programming 30 seconds more kneading.
  5. Take the dough into a bowl and cover it with film. Let stand for about 2 hours.
  6. Once the dough has raised we take portions, make balls and put a piece of mozzarella in the center.
  7. Put the balls on the countertop, cover with film and let stand for 30 minutes or so.
  8. Prepare plenty of oil in the pan and fry until well browned. Remove on absorbent paper to remove excess oil and serve.
If rosemary you do not like it can be changed for parsley or basil. You can also use it dry instead of fresh skipping the first step.
The levado time will depend on the ambient temperature of your kitchen.
