Pasta and chicken soup

During the winter I always have chicken broth or vegetables in the fridge. That way I can prepare at any time a delicious homemade soup. And to think that there was a time when I didn’t like soups… this pasta and chicken is a great alternative to warm up.

There’s no way to have a warm soup waiting when one comes home after a hard and cold day, don’t you agree? Soups also admit numerous ingredients. In this case we have used the chicken used to make the broth and have added pasta and some vegetables to make it more complete. Do you dare to prepare it?

Is there something that comforts us more than a warm soup when we get home in winter? This chicken and pasta soup is undoubtedly made for it.

Ingredients
For broth
  • 1 chicken
  • 1 carrot
  • 2 celery stalks
  • 1 onion
  • 9 cups water
  • Salt and pepper
For soup
  • Chicken crumpled
  • 2 carrots
  • 1 celery stalk
  • ½ onion
  • 3 cups pasta (sharks

)

Preparation

  1. We clean the chicken with cold water and put it in a large saucepan.
  2. We cut the carrot and celery stalks in half and onion into quarters. We add to the pot.
  3. We pour in water and bring to a boil. When it boils, we sprint and reduce to fire. Boil the broth on low heat for 30 minutes or until the chicken is well cooked.
  4. While the broth is cooked, chop the remaining vegetables into small pieces and reserve.
  5. Once the broth is ready, remove the chicken and strain the broth, returning it to the pot. We’re not going to waste anything!
  6. Place the chicken on a cutting board and when tempered we crumble the meat to return it to the pot.
  7. We also chop the vegetables used to make the broth and incorporate them together with those that we already have reserved to the pot.
  8. Cook the set 15 minutes over low heat while, in a separate casserole, cook the pasta. Once cooked we drain it and reserve.
  9. We rectify the salt point of the soup and serve it in bowls. We place the pasta next to each one who wants to serve.
