Ingredients
- 1 glass of quinoa
- 2 glasses of water
- 1 large potato
- 1 onion
- 1 red pepper
- 1 green pepper
- ½ eggplant
- ½ zucchini
- Salt
- Rosemary
- Olive oil
Preparation
- The first step is to wash the quinoa about 3 or 4 times so that it is not bitter and comes out all the whitish foam that looses. When we have done this the next step will be to put a glass of quinoa to boil in the water of two glasses, 2 tablespoons of salt and a little rosemary (500 ml approx.).
- Let it boil over medium heat for about 20 minutes . We will stir every little so that the grain is loose and does not stick to each other.
- Meanwhile, in a frying pan and with some olive oil we will sautée the vegetables and potato. All pre-washed, peeled and cut into thin sheets. We will put on medium heat and sautée until the vegetable is pochadita and done.
- The last step will be to serve the quinoa together with the vegetable. And ready to taste!
Notes
We can add a few drops of soy sauce to quinoa to give it a different flavor.
