Rabbit in sauce with mushrooms

Rabbit is a very soft and healthy white meat, it can be prepared in many ways and is delicious. Today I propose a rabbit in sauce with mushrooms and I assure you that you will have to have prepared a good amount of bread to dip in the sauce because it is vice.

Ingredients
  • 700 gr. rabbit pieces
  • 250 gr. mushrooms
  • 180 gr. onion
  • 3 cloves of garlic
  • 50 gr. olive oil
  • 30 gr. cognac or brandy
  • 200 gr. water
  • 90 gr. white wine
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1 tablet vegetable broth
  • 1 bay leaf
  • 1 pinch of nutmeg
  • salt
  • pepper
  • 1 teaspoon
    cornstarch
    1. Pour the onion and garlic into the jar and chop 10 seconds at speed 6. Lower the remnants of the walls with the spatula.
    2. Place the mixing paddle on the blades.
    3. Enter into the jar the pieces of rabbit springy to taste and oil. Schedule 10 minutes, temperature 120ºC, speed 2.
    4. Season with nutmeg, bay leaf and cognac. Cook 10 minutes, temperature 120ºC, speed 2.
    5. Add the white wine and schedule another 10 minutes, temperature 120ºC, speed 2, without the dosing cap so that the alcohol evaporates.
    6. Finally add the broth tablet, cornstarch dissolved in water, thyme, parsley and mushrooms in quarters. Cook the last 10 minutes, temperature 120ºC, speed 2.
