It is an ideal dish, because it is rich, it is fast and its ingredients are simple.In this case the fritatta I have made from ricotta cheese or cottage cheese, baby spinach, mushrooms and zucchini and I have to say that it has turned out frankly good. It is ideal to prepare in advance and also to take you to a dinner with friends. I just have to say: A comeer!!!!

Ingredients
  • 50 g olive oil
  • 50 g onion
  • 150 g of laminated mushrooms
  • 75 g of leaves fresh baby spinach (i like them better)
  • 1 grated zucchini
  • 6 eggs
  • 1 teaspoon salt
  • pepper to taste
  • 100 g of ricotta cheese or cottage cheese
  • 50 g of mixture of four grated cheeses
Preparation
  1. First we will heat the oven to 180 degrees.
  2. Next we put the oil andheat 1 minute 120 degrees speed S or 1.
  3. Then we enter the onion cut into quarters n a glass. Sautter 5 min/120ºC/VD 1 or S
  4. Add mushrooms and sautter 5 minutes 120 degrees speed 1.
  5. Then add the spinach, the fat grated zucchini and ½ teaspoon of salt and sauté again 5 min/120ºC/Vel 1. We retire to a bowl and reserve.
  6. Now we put the eggs, ½ teaspoon of salt and pepper in the glass and beat 30 sec/vel 5. Add the ricotta cheese and mix 10 sec/vel 3. We pour into a refractory fountain and reserve.
  7. Finally, add on top the reserved sauté vegetables (onion, mushrooms, zucchini and spinach) and sprinkle with the mixture of 4 grated cheeses. Bake 20 minutes at 180ºC or until golden brown.
