The frittata, from Italian fritto (participle of the verb friggere (frying), is a specialty of Italian cuisine similar to French omelette and is often filled with different ingredients such as onions, meat, vegetables, cheeses, potatoes, mushrooms, etc. It is an ideal dish, because it is rich, it is fast and its ingredients are simple.In this case the fritatta I have made from ricotta cheese or cottage cheese, baby spinach, mushrooms and zucchini and I have to say that it has turned out frankly good. It is ideal to prepare in advance and also to take you to a dinner with friends. I just have to say: A comeer!!!!

  • 50 g olive oil
  • 50 g onion
  • 150 g of laminated mushrooms
  • 75 g of leaves fresh baby spinach (i like them better)
  • 1 grated zucchini
  • 6 eggs
  • 1 teaspoon salt
  • pepper to taste
  • 100 g of ricotta cheese or cottage cheese
  • 50 g of mixture of four grated cheeses
  1. First we will heat the oven to 180 degrees.
  2. Next we put the oil andheat 1 minute 120 degrees speed S or 1.
  3. Then we enter the onion cut into quarters n a glass. Sautter 5 min/120ºC/VD 1 or S
  4. Add mushrooms and sautter 5 minutes 120 degrees speed 1.
  5. Then add the spinach, the fat grated zucchini and ½ teaspoon of salt and sauté again 5 min/120ºC/Vel 1. We retire to a bowl and reserve.
  6. Now we put the eggs, ½ teaspoon of salt and pepper in the glass and beat 30 sec/vel 5. Add the ricotta cheese and mix 10 sec/vel 3. We pour into a refractory fountain and reserve.
  7. Finally, add on top the reserved sauté vegetables (onion, mushrooms, zucchini and spinach) and sprinkle with the mixture of 4 grated cheeses. Bake 20 minutes at 180ºC or until golden brown.
