At home we enjoyed the weekend’s breakfastsvery much. Unlike what happens during the week, we do them unhurried. Getting up, thinking what kind of breakfast you want, cooking it and enjoying it while reading the press or talking is a pleasure, isn’t it?

Toast with scrambled banana and cinnamon are common in my usual weekend breakfasts. Sometimes I even add a drip of some dried fruit cream on top. Do you consume this kind of creams? They seem to me a great complement to my breakfasts.

These toast have a sweet touch, the more ripe the banana with which you prepare them. As for preparation, it has no mystery. You will have your toast ready in just 5 minutes and without too much effort. Do you encourage you to prepare them next weekend?

These toast with scrambled banana and Cinnamon are a great option as a breakfast. Complete them with a dried fruit cream and enjoy them with a coffee.

  • 1 banana
  • 1 egg L + 1 egg white
  • Cinnamon
  • Extra virgin olive oil
  • A slice of toast
  1. To begin we peel and chamfer the banana. I don’t have to look like a puree, there may be little pieces that will give texture to the scrambled.
  2. Then beat the egg and white lightly in a bowl. Add banana and ½ teaspoon cinnamon and mix.
  3. We heat a frying pan with a few droplets of oil and pour the mixture. We cook by stirring continuously until the stirring acquires consistency.
  4. To finish we serve the banana scrambled on the toast of bread and decorate with a little cinnamon or some cream of nuts.
