Vegetable and prawns rissoto

Do you want to try a rich rissoto of vegetables and prawns? Nothing easier than following our step by step to learn how to make this dish. Although dry rice dishes can not be prepared with Mycook, rissotosare usually delicious and at their right point. To prepare this rissoto we can use water, fish broth or vegetable broth depending on the flavor we want to predominate. I try to use fish fumet or some vegetable broth, since doing it only with water gives me the feeling that it is poor in taste.

  • 240 gr. of rice (variety arborio, carnaroli or bomba)
  • 100 gr. of pepper (mixed red and green)
  • 1 carrot
  • 100 gr. onion
  • 200 gr. zucchini
  • 100 gr. peeled prawns
  • 50 gr. olive oil
  • 30 gr. white wine
  • 500 gr. fish or vegetable broth
  • 20 gr. butter
  • 1 handful of grated parmesan cheese
  • salt
  • Pepper
    1. Pour the oil into the jar and heat for 1 minute, temperature 120ºC, speed 2.
    2. Enter all the vegetables (pepper, carrot, onion and zucchini) and cook 6 minutes, temperature 110ºC, speed 1-s. Lower the remnants of the walls with a spatula.
    3. If we like even smaller vegetables, schedule a few seconds at speed 5 until they are the size we want.
    4. Place the mixing paddle on the blades.
    5. Add rice and schedule 3 minutes, temperature 120ºC, speed 2.
    6. Add wine, salt and pepper to taste and schedule 1 minute, temperature 100ºC, speed 2.
    7. Add the broth and cook 12 minutes, temperature 100ºC at speed 2without dosing stopper.
    8. Finally enter the prawns and schedule 3 minutes more at temperature 110ºC, speed 2.
    9. Pour rice into a bowl and let stand 1-2 minutes.
    10. Pour the butter into pieces over the rice along with grated Parmesan cheese and stir with a spoon until we see that everything has been integrated and creamy rice.
