I present this recipe for vegetable dumplings for MyCook. The good thing about dumplings is that you can fill them with almost anything. They’re always delicious. They can also be made and frozen to have them for other days, which makes it easier to make impromptu dinners or have something to eat when unexpected visits come.
These vegetable dumplings are perfect for children and not so children to drink more vegetables at lunches or dinners. In addition, they serve as a side dish to any dish! I hope you like them!

Ingredients
- 190 g sweet onion
- 80 g pepper
- 190 g zucchini
- 140 g eggplant
- 90 grams tomato
- 20 g oil
- 1 pack of wafers of the cook’s dumplings
- salt, pepper and oregano
Preparation
- We put the oil in the jar of our MyCook and heat it for 1 minute to 120 degrees speed 2. While we remove the first layer of the onion and break it into 8 pieces.
- Put the onion into the MyCook jar and cook it for 3 minutes at 120 degrees at speed 2 with the butterfly. While cooking the onion cut the pepper into small squares.
- Then add the pepper to the jar and cook it for 2 minutes at 120 degrees at speed 2 (without removing the butterfly). Meanwhile, cut the zucchini and eggplant into cubes.
- When finished we put the zucchini and eggplant and cook 5 minutes at 120 degrees at speed 2 (without removing the butterfly and without the cap). While we wait we cut the tomato into small pieces.
- Finally we put the tomato and spices, and program 10 minutes at 120 degrees at speed 2 (with the butterfly and without the taponcito)
- We fill the empanadillas and cook them as we normally would
